Great looking car, can't write much right now, but you're asking all
the right questions. Removing the engine is usually more an issue of
effort than skill but it depends on the car. I had a friend recently
pull an Audi engine, and you have to remove the front bumper and the
engine comes straight out the front. If you're looking to sell the
engine, try to find a buyer before you pull it so they can check it
out. Adds a little hassle though, I just pulled mine. Also get the
factory service manual if you can. It's great for procedures peculiar
to your car.

As far as legal issues I don't know of any. I took my car in for a
safety inspection after it was converted. The tech had a fun time
checking it out!
