Fantastic!  If you've managed to find a 914 that's still in good
condition and not attacked by rust, you're very lucky -- those are
getting much harder to find these days.

You might consider putting the engine up on Craigslist or eBay to see if
it will sell before you remove it, if it would be useful to be able to
drive the car in the meantime. I have no idea what market exists for 914
engines, so I don't know how long you'll have to wait for a buyer. If
you don't mind the engine taking up space in the meantime, then by all
means have at it.

Do you have a flat, smooth concrete space (inside a garage preferably)
to do this conversion?

We have an engine hoist available. The manual lever is not working for
some reason, so you'll need to have an air compressor, or we may be able
to bring a portable one.  (Or alternatively, I could get off my butt and
try to fix the manual lever.)  The compressor is sort-of-portable with a
light truck or small SUV, as it disassembles into a few pieces.

Officially speaking the hoist belongs to our new for-profit company, but
we don't use it very often so it's available for AustinEV use. We don't
have a load leveler, but I've been meaning to get one, and it's pretty
useable without.  

If you need help with the removal, suggest a date on a weekend giving us
plenty of notice, we'll stick it in the calendar and we can have an
engine-removal party. :-)

I think disassembly is one of the most fun parts of building an EV.
Almost as nice as moving it under its own power for the first time.  :-)

Do you have plans for what components you'll choose to go into it?
