If you can, try to avoid trimming it much until you have a chance to 
test fit it in the car.  Having a little extra metal sticking out can be 
very handy to attach thing to, like your (anti-)torque rod, wire looms 
or sometimes even as a strong structural point for hanging battery racks 
from.

Also at this point you should think about modifying the plate for an RPM 
sensor.  If your controller will be a DCP Raptor/TRex you will need to 
use their (unreliable) photo sensor.  Better is magnets installed into 
recesses on the back side of the flywheel and a Hall effect sensor.  
Otmar's ADC short shaft sensor is also good, and does not require 
modifying the plate.

An RPM sensor is not strictly required, but it is _much_ more difficult 
to add it later and can be very handy for protecting your motor from 
overspeed.
