I think you've got the right idea -- it's about making sure you have the
capacity to supply enough current. Some people do run without the 12V SLI
battery but most would not recommend doing so since you would be taking a
risk to supply even brief transient loads beyond your converter's
capacity.
As Erik's car shows, you can get by with a very small battery. In Mark
Barr's Karmann Ghia, there was a tiny little gel cell battery (about the
size of your fist), and that would have worked out pretty well if it
weren't for the DC/DC being active continuously in that design. As it is,
I think the Ghia is indeed running entirely off the DC/DC converter right
now (correct me if I'm wrong, Aaron and/or Mark).
